What did I eat?

I went to a restuarant for Thanksgiving that was a little out of my league (or at least what I'm used too) I had an appetizer that was some kind of squash stuffed with ratatouii. Pardon my spelling if I'm incorrect. What is in ratatuouii? (I didn't see the movie) Also, they served a green citrus like spritzer in a shot gl with a rubber looking reddish square thing before the main course. What was the purpose of this and how should I have consumed it. We were in Sedona, Arizona so I'm wondering if the green citrus could have actually been cactus?
